Baked Salmon with Potato & Spinach
I made this using a side of salmon, but it could work with filets too.

Glaze
Combine all in a small bowl & taste as you go along to get it where you want:
  • mayonnaise
  • dijon mustard
  • lemon juice
Sauce
Combine all in a small bowl & taste as you go along to get it where you want:
  • fat-free sour cream
  • fat-free yogurt, plain
  • lemon juice

Line a baking dish with foil & coat with olive oil. Lay the salmon skin side down & then coat with the glaze. Cover that with crushed/chopped up walnuts & bake until the fish starts to get flaky.

Once the fish is almost done you can broil it til the sauce gets a little browned & crusty on top, likely no more than five minutes.

Serve over roasted potatoes and steamed spinach. Drizzle with yogurt sauce.
