The Rockingest Easter/Passover Popover Ever

This is about the easiest meal in the world to make, and it's oh so tasty. You can top it with either sweet or savory items. We had cheese, salt, pepper, jam and pineapple with ours. It's really good with syrup, powdered sugar or just about any topping you can think of.

To Prepare
First, take half a stick of butter and put it into a 10" cast iron pan. Pop that into the oven at 350 until the butter melts all the way.

While you're waiting for the butter, mix the following items in a blender until smooth:

  • 1 c. flour
  • 1 c. milk
  • 4 eggs
  • dash salt
When the butter's melted, pour the blender mix into the buttery pan and let bake for 40 minutes, or until it's brown around the edge and sufficienty popped.

We had this with bacon and toast for an Easter celebration. If you're doing it for Passover you might want to switch it to turkey bacon.
