Start making the rice and when it's done, add in:
- beans - we used black beans
- homemade salsa
- peppers - we used jalapeños
- salt/pepper - we used sea salt & fresh-ground black pepper
- garlic (chopped cloves)
- canned tomatoes - we used the ones in the aluminum can
2. Pesto Potatoes
Par boil them and then transfer to a baking dish and coat with pesto & fresh squeezed lime juice.
Bake until awesome.
We made cornbread to go with ours since that and the potatoes baked for the same amount of time.
