Salmon Salad

This is a pretty basic salmon & pasta salad, but it's really light and perfect for the summertime.

1 Bake one salmon filet in a foil-lined & well-oiled baking dish until it's flakey. Until the salmon's flakey, that is, not the baking dish.

2 Mix together:

  • 1 small box macaroni noodles (cooked, unless you don't mind broken teeth)
  • 1/2 bag frozen organic peas (throw in with still-hot noodles & let them thaw)
  • mayo
  • dijon mustard
  • a dash of lemon
  • salt/pepper
  • dill (fresh if you have it)

3 Add flaked salmon and mix it all up one last time
