This is very nearly a two-person job unless you have a show on the food network.
Since we had corn on the side and that takes the longest, we wrapped them up in foil and put them in the covered grill while we chopped the pile of veggies.
We used eggplant, squash, red peppers and tomato. They don't take long on the grill, but they can turn to crap pretty fast if you don't pay attention or if your grill is too hot.
After laying the veggies on the grill, I started the pasta water while Rowan got working on the dressing.
Once grilled, we chopped the veggies and threw them in with the drained pasta. While Rowan tossed all that with the dressing, I grilled up some slices of bread.
By then the corn was done and everything could be put together. It's a fair amount of effort just for some grilled veggies in pasta, but it tastes so good it evens out.
