Veggie Quiche

  • premade pie crust
  • chopped onions, spinach & peppers
  • 4 eggs, whipped
  • grated cheddar & hot pepper jack cheese
  • 1 tsp mayo
  • salt, pepper, fresh herbs ( I use rosemary & basil)

Preheat oven to 350

Sautee the onions, spinach & peppers in olive oil. Put them in the pie crust, let cool, and pour the whipped eggs over top.

Add in the cheeses, mayo, sour cream, salt, pepper & herbs. Mix until even.

Bake until eggs are done through.
